TERROIR : At the foot of the Vercors range along the Drôme river, on its rocky and steep slopes – among the highest in France – our vineyard enjoys a sharply contrasted climate. Severe winters and dry summers mould its flamboyant features under the bright sunshine of Provence.
SOIL : Clay-limestone
GRAPE VARIETY : 100% Clairette Blanche
WINE-MAKING PROCESS : Entirely gathered by hand, the Clairette de Die Brut is made using a specific method : after an initial fermentation in tanks, the wine is bottled and the addition of a tirage liqueur made of sugars and selected yeasts triggers off a second fermentation. The maturing process takes one to three years on slats. Adding an expedition liqueur, after the removal of sediments by filtration, ends up the process.
COLOUR : Beautiful golden yellow colour with green reflections
BOUQUET : Mild notes of nuts and scents of white flowers
PALATE : Round and melted aromas of dried fruits
FOOD & WINE PAIRING : Perfect as an aperitif, on its own or in a kir cocktail, it can also be enjoyed throughout an entire meal on fish or white meats
