TERROIR : the Clairette de Die Tradition, vintage "Origine" was born of the Biodynamic culture of several plots of the Haut-Diois according to the lunar calendar. Age o the vine : 30+years. Converted to biological farming in 2005, and to biodynamic in 2010.
LAND : Clay-limestone soil.
GRAPE VARIETY : 85% small-berried Muscat, 15% Clairette blanche.

VINEYARD BEHAVIOUR : Biodynamic farming consists primarily in caring for the soil. We aim to promote balance and harmony between soil, plant and environment, in order to optimize the expression of the land through the grapes and ultimately, the wine.
WINE-MAKING METHOD : The grapes are harvested and selected exclusively by hand. The plots are carefully monitored for grape maturity in order to achieve the best picking time. Your Clairette de Die is then prepared following its very own wine-making process : the Ancestral Dioise Method. The grapes are de-stemmed and crushed ipon their arrival at the press. The juices are then sorted and kept in refrigerated tanks. This marks the beginning of a very slow fermentation process induced by the combined effects of the naturally occurring yeast and the very low temperature (0 to 10°C). The partially fermented juices are then bottled up on a fruit day. The effervescence and the fermentation of the naturally occurring sugars will then continue until the alcohol concentration reaches 8°. No sugar is added during the wine-making process.
APPEARANCE AND FLAVOUR : Glossy and crystalline, it boasts a beautiful light gold robe with hints of straw. This naturally sparkling white wine typically tastes of white fruit, apple, pear, white blossom and honey. Generous and fresh, with the typical aromatic range of a Muscat, it throws off the floral scents of vine peach, pear, elderflower and honey.
DRINK IT WITH : As a pre-dinner aperitif or with pudding, this wine can be served with many a dish. Try it with a foie gras, a mango sorbet or a delicious chocolate and almond cake and allow it to fully harmonise your menu.
