TERROIR : situated in the heart of the Rhone Valley, dominated by mountains, our vineyard grows on rocky and steep hillsides, among the highest in France. Between alpine influences and provencal sun, severe winters and dry summers, our wine owes its character to the contrasting climate of its territory.

GRAPE VARIETY : 85% Muscat à petits grains - 15% Clairette blanche
WINE-MAKING PROCESS : after a hand-picked harvest, the Clairette de Die Tradition is produced according to a specific process named the « Méthode Dioise Ancestrale ». The grapes are destemmed and crushed as soon as they arrive in the winepress, then juices are selected and stored in refrigerated vats. This is the beginning of a very slow fermentation due to the combined effect of yeasts naturally present on the grapes and the very low temperature (0° to 10°C / 32° to 50°F). Then, half-fermented juices are bottled, the sparkling process and fermentation of the natural sugars contained in the juice continue until it reaches 8% vol. (with no drawing liquid added).
COLOUR : brilliant and crystalline, it reveals a pale yellow colour with straw reflections.
BOUQUET : the nose reveals white fruit notes, apple, pear, white flowers and honey scents.
PALATE : greedy and full of freshness, the aromatic palette of the Clairette de Die, typical of Muscat grape, reveals floral notes, vineyard peach, pear, elderflower and honey aromas.
FOOD & WINE PAIRING : ideal as an aperitif, original with a foie gras, it is also perfect with frozen desserts, chocolate cake, or fruit tarts.
