TERROIR : The Crémant de Die, vintage « Origine » was born of the biodynamic culture of several plots according to the lunar calendar. Age of the vine : 30 +years. Converted to biological farming in 2005, and to biodynamic farming in 2010.
SOIL : Clay-limestone.
GRAPES : 83% Clairette blanche, 15% Aligoté, 2% small-berried Muscat.

VINEYARD BEHAVIOUR : Biodynamic farming consists primarily in caring for the soil. We aim to promote balance and harmony between soil, plant and environment, in order to optimize the expression of the land through the grapes and ultimately, the wine.
WINE-MAKING METHOD : Grapes harvested and selected exclusively by hand. The plots are carefully monitored for grape maturity in order to achieve the best picking time. Your Crémant de Die is then prepared following the Traditional Method. Following a first fermentation in the tank, the wine is bottled with a liqueur de tirage (comprised of carefully selected yeast and sugars) and can start its secondary fermentation. The bottles are then stored on their side where they can begin the 18 month aging process required to obtain this Cremant’s fine sparkle. The final step consists of freezing and disgorging the lee and removing the crown cap before adding a liqueur d’expédition.
APPEARANCE AND FLAVOUR : Light golden colour with delicate bubbles and a dense and persistent foam layer. This wine gives an expressive and appealing aroma of fresh, white-flesh fruit with exotic notes. In-mouth, it first combines a fresh taste with a cream and fine sparkle. Its tangy flavor then mixes harmoniously with the sugar to release some fresh fruit or even floral notes. This balanced vintage leaves a gourmet aftertaste.
DRINK IT WITH : As an aperitif or to complement a main course such as a porcini mushroom risotto or an oven baked swordfish à la provençale with a side of julienned vegetables, this is the perfect wine to harmonize your menu. As a pudding wine, this Crémant is magnificient with a traditional or re-visited Black Forest gateau.
